Sweet and Spicy Citrus Chicken with Black Beans

When you get tired of the same old boring chicken recipes, create some excitement with a Caribbean twist. This simple to prepare and healthful, protein-filled recipe will give your body the fuel it needs in order to perform a great workout, while leaving you not only filled, but also fulfilled.

2 boneless, skinless chicken breasts

1 tsp. olive oil

ΒΌ tsp each salt and pepper

2 tablespoons sweetened cream of coconut

1 tablespoon hot sauce

1 lime

One can of black beans

2 tablespoons chopped cilantro


Brush chicken breasts with olive oil and season with salt pepper. Grill on medium heat for 5 minutes, turning them over once, halfway through. Whisk cream of coconut and hot sauce together and brush onto the chicken, grilling approximately 5 minutes longer or until done, turning once. Halve lime and grill 2-3 minutes until lightly charred.

Rinse and drain black beans, season with salt to taste. Serve chicken over the beans and add a garnish of cilantro along with a squeeze of grilled lime. Double the recipe and enjoy the it next day for lunch as a topping to a salad, or wrapped in a whole wheat tortilla.
