Flavorful Smoked Turkey Salad
Loaded with flavor, plenty of protein and fresh vegetables, this quick and easy to prepare salad is perfect to pack for lunch or enjoy for a fresh, no-cook dinner. Use radicchio leaves for a pop of color and a burst of vitamins and minerals, if available.
4 ounces diced smoked turkey
1 C. drained artichoke hearts, quartered
6 cherry tomatoes, halved
½ C. diced red pepper
¼ C. finely chopped red onion
¼ C. packed baby spinach leaves, chopped
1 tablespoon fresh lemon juice
½ tablespoon olive oil
1/8 teaspoon black pepper
1/8 teaspoon dry mustard
Pinch of salt
4 radicchio or large leaf lettuce leaves
For the dressing, combine lemon juice, olive oil, salt, pepper, mustard in a small bowl and whisk (or put in a covered container or jar and shake until combined)
In a large bowl combine remaining ingredients, add dressing and toss. This can be refrigerated in a covered container.
Fill radicchio or lettuce leaves with turkey salad, roll up, and enjoy.
